Roberto Vicario is the Executive Chef and Managing Director of AQUA Pazza. His journey with food began at home in Italy, where he learned the art of traditional cooking from a young age. After years in the oil and gas industry as an engineer, his passion for cuisine led him back to Italy to refine his skills in Italian cooking, bread baking, and pastry-making.
With experience from travelling the world and a deep appreciation for authentic flavours, Roberto brings together the culinary traditions of Italy and Spain at AQUA Pazza. Here, he combines time-honoured techniques with his creative approach to present a menu that celebrates both cultures.
